Q: Saan o kanino ba galing ang inyong tinuturo sa inyong mga workshop?
A: Galing po ito sa marami naming trial and error. Hindi sa ibang tao, mentor, chef at lalong hindi sa ibang workshops. Wala sa youtube, baking books at google.
Experience is still the best teacher. Kami ang baker, tindera, panadero at delivery boy. Nagawa namin yan, kahit saan mapunta kuwentuhan kaya namin ibahagi, baka yung ibang baking coach o umattend lang ng baking training, hindi nagawa yan araw-araw. Sa mga training namin nandun pa rin ang KABA, hindi puedeng wala. Kaba na baka pumalpak kami during baking session, ang kaba na baka hindi umalsa, niluto't natikman na hindi masarap ang tinapay. Paano na? Hindi madali magturo, lalo na kung ang estudyante mo ay Chef na, Bread/Pastry trainor, master baker, Bakery Owner o sobrang zero know-how talaga sa baking. Lahat ng aming ginagawa ay hindi praktis, hindi tsamba, haka-haka o try-try lang. Lahat ay puedeng paninda na! Bawat isa ay may kanyang kapasidad, may mabilis matuto at merong kabagalan. Pero pag ginusto, imposibleng hindi. Nagiging mahirap kung ayaw mong unawain o sadyang alam mo sa sarili mong alam mo na yan pero hindi pa pala. Yes, every learning moment is different.
May mga taong mapanuri, pintasero at naghihintay kung kami'y magkakamali. Perfectionist with extreme high expectations. Dapat laging may KABA sa amin para mailabas ang aming hamak na galing (Wow! Naks!), mula sa puso't isip at wala sa printed recipe. Mga totoong battle namin sa buhay na hindi na namin nai-video.
Everyday is a blessing as well as challenges for us to improve for the better. Kaya nga ang tagline namin: Perfecting the Art of Baking Commercial Breads (ABC).
Sumubok ka mag-bake, gumastos ka sa ingredients. 1 cup of flour at iba pang sangkap. Ang resulta ay pumalpak. Sinunod mo naman ang recipe at procedure kung saan mo man 'to nakuha. Halimbawa sa Youtube puede mo bang sisihin ang nag-upload nito? Sa libro, puede mo bang pagalitan ang author? O sa training puede mo bang kulitin ang trainor kung every palpak mo ay naka depende sa binigay sa'yong Hand-Out? Nasa'yo naman yun kung wala kang tiyaga. Nanghihinayang ka sa 1 cup o 1 kilo? Samantalang kami may araw na 1 sack (25 kilos) nasasayang ma-achive lang ang tama. Tulad nung 2014 Christmas Eve, 2 sacks ang nasayang sa amin dahil hindi umalsa ang ginawa naming Tasty.
Moral lesson? Keep on trying it will leads you near perfection. Don't blame. And yeah, keep praying... it works!
Pag gusto ang ginagawa nakakalimutan ang oras, pagod at hirap. Hindi lahat ay tungkol sa pera. Minsan miski huwag ka nang bayaran, huwag ka lang pintasan, tama? Wala ka ngang kinita, wala ka naman nasagasaan o nasaktan. Hindi ito pabilisan pero kailangan sa bawat iyong pagdadaanan meron kang natututunan. May mga pagkakataong gagastos ka talaga para matuklasan lang ang isang bagay. Oo nga't masarap ang libre, pero mas masarap ang pinaghirapan.
